Carob (Ceratonia siliqua) is an evergreen Mediterranean tree grown for its sweet, edible seedpods, used as a chocolate substitute, flour, and livestock fodder. It fixes nitrogen, tolerates drought and poor rocky soil, and is long-lived once established.
