Cardoon (Cynara cardunculus) is a perennial Mediterranean thistle grown mainly for its blanched leaf stalks, used as a celery substitute, rather than its flower buds. It’s the wild-type parent of globe artichoke, which was bred from it for the flower buds instead of the stems.
