Wine cap (Stropharia rugosoannulata), also called garden giant, is an edible fungus grown outdoors on wood chips or straw, prized for its umami flavor.12

Inputs

  • Substrate: fresh hardwood wood chips (at least 50% hardwood) or chopped cereal straw, 6-8 inches deep over bare soil or compost; no pasteurization needed outdoors.12
  • Moisture: soak the bed thoroughly after inoculating and keep it moist for the first 4-6 weeks.12
  • Partial shade and temperatures of about 50-70°F (10-21°C) favor fruiting, which follows heavy rain or a temperature drop, 4-6 months after inoculation.12
  • A bed needs little upkeep afterward and can keep fruiting for years if topped with 2-4 inches of fresh wood chips or straw each fall.1
