Thyme-leaved savory (Satureja thymbra) is a shrub native to south-eastern Europe (the Balkans, Crete, Greece), found in sunny positions on dry rocky hills. Its peppery, thyme-like leaves are used as a condiment and tea, and a strong infusion of the herb is traditionally used to clean wine barrels before the new vintage.1
