Water horsetail (Equisetum fluviatile) is a perennial herb of shallow water in lakes, ponds, and ditches across arctic and temperate Europe, North America, and Asia. Its roots and shoots contain thiaminase, which can deplete vitamin B1 in large quantities — heat or thorough drying destroys the enzyme.1
